Happy Monday!  I don’t know about you, but I would really like to be curled up on my couch right about now instead of being back to real life. I just discovered the new-ish Whole Foods on the Upper East Side. It opened in August, and I can’t believe it took me this long to go – I think I subconsciously knew that it would mean trouble for me. I spent an hour in there the other day just filling my cart with things that we really don’t need but can’t live without (like these all-natural candy bars, which are really just a Snickers bar pretending to be healthy).  Everyone always complains about how overpriced Whole Foods is, so I was surprised when a pint of blueberries was on sale for $1.99!  I have a skewed view of grocery prices due to living in NYC, but I’m pretty sure that is a great price for berries anywhere you live!  So clearly I had to bake something using blueberries.  Since summer is here and I was trying to lighten things up a bit, I decided to make a blueberry lemon bread, using yogurt and applesauce to replace some of the fat.  I also snuck some whole wheat flour in there for some added nutrition.  The results were fantastic!  The bread was so moist with the perfect amount of sweetness, and I loved the combo of the lemon and blueberry flavors – it tastes like summer!  …

It is finally starting to feel like summer!  Which means I want to eat ice cream pretty much all the time (TheBetterhalf: How is this different from winter?).  NYC is dangerous for me – there is an ice cream or fro-yo store on almost every block.  But rather than giving in to the temptation the other day,  I decided to make a coconut smoothie to satisfy my craving for a frozen treat.  I like to make my smoothies with yogurt and milk so that they are creamy and make it seem like I’m drinking a milkshake.  But I use almond milk and fat free yogurt, so the calorie count stays low and there is very little fat.  I went with a pineapple coconut smoothie to really make myself feel like I was on vacation!  The entire thing only has 214 calories, and this make a huge smoothie!  For those looking for a fun drink to make over the long holiday weekend, this pineapple coconut smoothie would also be great with a little rum added in.  Cheers!   …

Monday morning is here again.  I always start the week off with lofty goals to be healthy, when really all I want to do is eat a giant pain au chocolat.  But this morning, I have a great recipe that combines the best of both worlds.  Chocolate zucchini bread!  It tastes rich and decadent – thanks to chocolate chips and cocoa powder – but is healthy because most of the fat is replaced with nonfat Greek yogurt, and the loaf has 1.5 cups of shredded zucchini!  Of course, this isn’t as good for you as a bowl of plain oatmeal – but it is much more virtuous than the giant scones that stare at me from the Starbucks case every morning. The yogurt gives this bread such a moist texture. You won’t even miss the fat! Some people might argue that this is not healthy because you are still eating chocolate for breakfast.  Just tell them that you had a serving of veggies at breakfast, and that totally negates the chocolate. …
