Lentil Salad with Olives, Mint, and Feta

Lentils are cooked until creamy but firm, tossed in a mustard vinaigrette, and then mixed with kalamata olives, feta cheese, and fresh mint. Healthy, easy, and delicious!

Have you heard of Meatless Monday? According to Wikipedia: “Meatless Monday is an international campaign that encourages people to not eat meat on Mondays to improve their health and the health of the planet.”  Sounds like a win win to me!

Plus, I always try to be a little healthier on Mondays. It feels good to start the week off on a healthy foot, and to undo some of the damage from the weekend – because I don’t know about you, but my weekends are usually full of eating pretty much whatever I want.  So I have a great meatless and healthy recipe to share with you today – Lentil Salad with Olives, Mint, and Feta….

Deli Style Rolls

These deli style rolls are the perfect sandwich roll – they have a substantial crust yet are light and airy on the inside. Just like you would find at a deli!

It is no secret that I love baking bread. I usually try out a different loaf every weekend that we are in town. But for some reason, I never make rolls. I’m not sure why – they aren’t harder to make than normal bread. I just never think about it. But some sandwiches just call out for a roll. Like pulled pork – definitely need a roll for that! Or an egg sandwich – it just isn’t the same on toast. So I decided that we needed some deli style rolls in our life!…

Oatmeal Sandwich Bread

This is my first bread post of 2014!  I might seem overly excited about this, but it is because I love bread.  It doesn’t matter how many times I bake bread, I still get excited every time it turns out well.  And this loaf of oatmeal sandwich bread turned out so well.  TheBetterHalf actually said it was his favorite loaf yet, and that really shocked me because there is a whole cup of oatmeal in here!  He is not the biggest fan of oatmeal.  But you can’t actually tell there are oats in here – they kind of dissolve and the resulting bread has a soft but sturdy texture.  It is the perfect sandwich bread!

Just look at that PB&J – doesn’t that picture make you want one?   I might need to have that for lunch today.  …
