Happy Valentine‘s Day  everyone! I’m a day early I know, but I will be off to Savannah, GA tomorrow morning for a weekend getaway (any food recs for me??) so I wanted to send you sweet wishes today! There are only 5 days until Valentine‘s Day! Do you have fun plans? I’ve actually never really been that into Valentine’s Day – but I do like any excuse I can get to bake delicious and festive treats. There is just something about heart shaped sprinkles that makes any baked good taste better! Like Caramel Stuffed Red Velvet Cookies. Sure these fudgy chocolatey cookies stuffed with ooey gooey caramel and melty chocolate chips would taste amazing on their own – but the Valentine’s sprinkles just make them so darn cute!!  So I guess I liked – I am into Valentine’s Day.  🙂

Is everyone getting excited for Valentine‘s Day? I must admit, I have never really been into Valentine’s Day.  It was just never my thing (somewhere, TheBetterHalf breathes a huge sigh of relief…).  However I’ve crossed over to the food blogger dark side – you know, when you post recipes way before the actual holiday (like my Thanksgiving spread) and get overly excited for every little holiday (I mean who wouldn’t want to celebrate national cookie day!).  And really, when candy and cute colors like pink and red and adorable sprinkles are involved – well how can I not be on board with that?! So I guess I was wrong – I am into Valentine’s Day! And so I made you a perfect recipe for Valentine’s day – Red Velvet Chocolate Chip Cookies….

I can’t believe it has taken me so long to make an Ina Garten recipe for the blog! I love the Barefoot Contessa. I dream about having her house in the Hamptons, but I’ll have to settle with watching it from my one bedroom in NYC and reading her cookbooks. I seriously want to make everything from her cookbooks. I decided on Red Velvet cupcakes because I know they are a crowd pleaser! I personally don’t understand the fuss about red velvet. They just never taste chocolatey enough to me!  But I do love cream cheese frosting. And I can’t only bake things with peanut butter and chocolate, so Red Velvet it is!  This is a great recipe too.  The cupcakes are moist with a hint of chocolate flavor, and the cream cheese frosting on top is SO good. I must say though, as much as I love Ina, why does she bake with extra-large eggs? Every other baking recipe calls for large eggs! But I trust her, so I bought extra-large eggs just to make these.  …
