Split Pea Soup with Ham…so I know this is kind of a weird recipe for Chez CateyLou.  I mean I get it – split pea soup sounds kind of odd, and doesn’t look particularly appealing.  In fact for the majority of my life, I hated the stuff. My grandmother loved split pea soup and I remember her trying to make me eat it – she was unsuccessful.  Little Cate was not going to touch that weird green soup. But one day a few years ago, I actually tried split pea soup and was shocked…I liked it!  A lot!  And this recipe for split pea soup with ham is seriously delicious, so I just had to share it with you!!

It is officially soup season, and I am so excited about it! One of my absolute favorite things to make on fall weekends is a big pot of soup. This Green Chile Chicken Soup is the first soup I made this fall, and we absolutely loved it. It is so flavorful and is packed with tons of veggies, chicken, and beans – filling, healthy, and delicious.

And today is Mystery Dish day! Our host this month is Zainab from Blahnik Baker. She was one of the first friends I made in the blog world and she is just the best – if you haven’t seen her blog I definitely recommend it. You will love her and all of her delicious baked goods!

Cara Cara Orange Mini Muffins

March 22, 2014 by Cate 20 Comments

Cara cara orange zest is stirred into mini muffins, and then the juice is mixed with brown sugar and poured over the warm muffins. These are so flavorful and so good!
Cara Cara Orange Mini Muffins | chezcateylou.com

Have you ever made something, and then asked yourself, “Why have I not tried this before?!” That is exactly how I felt with these cara cara orange mini muffins. I have never baked with orange juice (or orange anything!) before, and I really have no idea why. I like oranges. They are pretty.  TheBetterHalf drinks orange juice almost every morning.  So why have I discriminated against this citrus fruit in my baked goods in the past? No clue.  These beautiful cara cara oranges are what prompted me to bake using oranges, and I am so thankful that they did – these muffins were SO good.

Carrot Coconut Soup

January 26, 2014 by Cate 34 Comments

This Carrot Coconut Soup combines fresh carrots and coconut milk with sambal oelek to create a soup that is so full of flavor and such a gorgeous color!

Carrot Coconut Soup | ChezCateyLou.com

I feel like I’m cheating with this post.   Why?  Because I didn’t make it!  Yep ladies and gentlemen – TheBetterHalf made this whole thing, from start to finish.  I didn’t even help him!  Ok, he might have asked a question or two (he’s still not quite sure what an immersion blender is).  But still, I’m impressed.  I could get used to this – homemade soup is one of my favorite things to eat, and somehow it tastes better when someone else makes it!  Take note, TheBetterHalf.

January 11, 2014 by Cate 24 Comments

Vegetarian Chili | chezcateylou.com

Is there a more perfect winter food than chili? It is so warm and comforting and makes such a hearty meal when it is cold outside.  And it’s the perfect food to eat when you’re watching football.  Now I’m sure my meat loving readers are scoffing over this meatless chili recipe, but I promise you, it’s delicious!  This chili is so full of flavor and texture that you won’t even miss the meat.  And if you are still in doubt, this vegetarian chili has TheBetterHalf’s seal of approval!  This is really saying a lot because he rarely has a meat free meal.
