Meyer Lemon – up until recently I didn’t really know what this fruit was. I had heard of them and seen them on many restaurant menus, but I had never actually researched meyer lemons or bought them. And then I saw a bag of the gorgeous things at Trader Joes the other day and all of that changed. I am now obsessed with Meyer Lemons, and in particular with these meyer lemon mini muffins!

Skinny Donuts with Chocolate Greek Yogurt Icing

It is my first recipe of the new year, so I thought it was only appropriate to share a donut with you!! If you are new around here, then you might not know about my donut obsession.  I absolutely love making (and eating) baked donuts, and so of course when I was thinking about my first recipe for 2015 I naturally wanted to make donuts.

But don’t worry, I’m not going to ruin the new year’s resolution diets (at least not yet…) – these are SKINNY DONUTS!! Yep, that’s right – skinny donuts with chocolate greek yogurt icing.  There are only 135 calories in each donut, can you believe it?!  And, they don’t taste skinny in the slightest.  They are moist and rich and absolutely delicious.

Did everyone have a nice labor day weekend? TheBetterHalf and I were in St. Louis visiting my family. In fact as you read this, we are on our way to the airport to head back to NYC. The weekends always fly by way too fast!

Tomorrow morning is going to be rough – not only is the long weekend over, but summer is over. I am definitely going to need something good for breakfast to cheer me up, and Double Chocolate Muffins will be just the thing. Light and fluffy chocolate muffins full of chocolate chips – who wouldn’t smile if that was on their breakfast plate?!  And the fact that they are actually light and healthy is just icing on the cake!

Whoa, how is the summer almost over?  Some of my blogging friends have already started posting pumpkin recipes!  I’m not complaining – pumpkin is my second love (after peanut butter) and I bake with it year round.  But I have so many summer recipes I still want to make before the summer ends.   Things with corn and tomatoes and berries and peaches and zucchini… I have a lot of baking to do between now and Sept 1 🙂

So since I’m not quite ready to embrace the pumpkin, today I have a perfect summer recipe for you – Vanilla Frozen Yogurt!
