It is a beautiful summer Friday, and I can’t think of a better way to celebrate than with a Limoncello Cocktail!  This is probably the simplest recipe I have ever posted on Chez CateyLou.  And that’s why it is so perfect – you only need two ingredients to make a delicious, refreshing, and pretty summer cocktail!  That’s right – with just limoncello and club soda you can have a summer party started in no time!

It is an absolutely gorgeous day here in NYC! Sunny, 75, just a few puffy white clouds in the blue sky – perfect! It rained about every day this week, including an absolute monsoon last night, so we are ready for some sunshine. And chez CateyLou, beautiful weekend days mean rooftop cocktails! Baked Lemon Donuts made with Greek Yogurt

I always hear people say that they are either a lemon lover or a chocolate lover and I never really understood that – why can’t you be both?? If I had to pick, I (obviously) pick chocolate. But I really love lemon too! So even though I could eat these chocolate frosted donuts every day, I wanted to give lemon donuts a shot.

And wow, I’m so glad I did! These baked lemon donuts are absolutely amazing. The flavor is delicious – so fresh and citrusy.  I think these would be a lovely thing to make for Mother’s Day brunch!

Cara Cara Orange Mini Muffins

Cara cara orange zest is stirred into mini muffins, and then the juice is mixed with brown sugar and poured over the warm muffins. These are so flavorful and so good!

Have you ever made something, and then asked yourself, “Why have I not tried this before?!” That is exactly how I felt with these cara cara orange mini muffins. I have never baked with orange juice (or orange anything!) before, and I really have no idea why. I like oranges. They are pretty.  TheBetterHalf drinks orange juice almost every morning.  So why have I discriminated against this citrus fruit in my baked goods in the past? No clue.  These beautiful cara cara oranges are what prompted me to bake using oranges, and I am so thankful that they did – these muffins were SO good.
