I’ve mentioned this before, but one of the most concerning things to happen to me in the first trimester was not the constant nausea or fatigue…it was the loss of my sweet tooth! Honestly, desserts are one of my favorite things ever, so to just have no interest in eating anything sweet was the most bizarre thing ever. I wondered if it would be like that forever. And then one day, TheBetterHalf and I were in our local market, and something sweet actually sounded appealing to me…a Brooklyn Blackout Donut from the Donut Plant!!! It was like a light at the end of the first trimester tunnel.

Then for about 5 days in a row, I had to have that donut. Which was problematic when the store was out of it and I then had to go to every local coffee shop that serves Donut Plant donuts to find one…making me late for work…but it was totally necessary. After about the fifth day I decided that I probably shouldn’t be eating fried donuts every morning, so I thought it would be really fun to create a baked version! These are just as moist and chocolatey as the real thing, but are much lighter….

Today we are celebrating….it is Chez CateyLou’s 3rd birthday!!!! I can’t believe I have had this blog for 3 years! I’m sharing a very special recipe with you today for a very special day…it is TheBetterHalf’s 30th Birthday! He’s finally as old as I am, at least for the next 6 months. He was complaining the other day about getting old. I told him he would get no sympathy from me! Welcome to 30 – it isn’t so bad!

I love celebrating birthdays on the blog – it is nice to have an excuse to make a decadent birthday treat (not that I need an excuse to bake…). Growing up, Texas Chocolate Sheet Cake was one of TheBetterHalf’s favorite desserts, so I got the recipe from his mom to make for his birthday. I was nervous to bake a family favorite, because I didn’t want to mess it up! Luckily, he said this chocolate sheet cake was just as good as he remembered it.

I can’t even begin to tell you how many of my recipes are a result of trying to use up an ingredient in my fridge. I HATE wasting food, but I’m constantly buying something for a recipe and then only using part of it.

Ex: milk. I will buy milk to make muffins, and then I have an entire carton to use up! (TheBetterHalf and I both hate to drink milk).

So this recipe came about because I had exactly 5 oz of cream cheese to use up! And I conveniently had 3 king size packs of Reese’s peanut butter cups (I can’t resist things that are on sale). And thus, Peanut Butter Cup Cheesecake Bars were born!

Happy December! I know I’m a day late in wishing you that…I had every intention of posting these lil Chocolate Shortbread Cookies yesterday morning, but my TiVo was so full of great shows from being away for two weeks that I couldn’t stop watching TV Sunday night. And then promptly fell asleep at 9pm because of JetLag. So, cookies had to wait until today :)
