Parmesan Cheese Toast with Brown Sugar Bacon

November 30, 2015 by Cate 13 Comments

Sweet candied brown sugar bacon tops a savory and salty broiled parmesan cheese toast – these are good enough to be called the Best Appetizer Ever!
Parmesan Cheese Toast with Brown Sugar Bacon, aka The Best Appetizer Ever! | ChezCateyLou.com

Parmesan Cheese Toast with Brown Sugar Bacon is quite a long name for a recipe…I should have just called it The Best Appetizer Ever. Because honestly – this really is the BEST appetizer ever. I mean first of all – brown sugar bacon, aka candied bacon, aka sugared bacon – that alone could be considered one of the best appetizers ever. Sweet and salty and crispy – I could eat an entire plate full of just that! But what makes this THE best is the parmesan cheese toast points. The combo of the nutty salty parmesan broiled on the toast and then topped with the bacon is nothing short of life-changing. Seriously.

Growing up, this appetizer was always served at family parties at our country club. Any get together HAD to include this hors d’oeuvres. And they were always the first to go. In fact at our wedding, we ordered double the amount of these because we knew that everyone would go crazy for them. And yet even after having these for years, I had never actually tried to make them myself. Well…now I know how to make them, and, I know how easy it is to make them – this is going to be dangerous. My brother has already requested that I make a giant platter for Christmas Eve!

Minty Pea Prosciutto Toast

February 28, 2014 by Cate 24 Comments

minty-pea-prosciutto-toast-7

Oh wow, this month has flown by! I seriously can’t believe it is already Feb. 28. And, already time for another Mystery Dish post! The amazing Christine from I Dig Pinterest picked the ingredients for us this month. They were:

Fresh Mushrooms
Pork
Spinach
Cream Cheese
Pineapple
Butterscotch Chips
Macadamia Nuts
Sriracha Hot Chili Sauce
Ritz Crackers
Tortillas

I was seriously considering making spinach artichoke dip with mushrooms and bacon, using cream cheese and sriracha, and having ritz crackers and homemade tortilla chips for dipping! But then I decided to settle down. No need to get so wild. Plus, I was dying to make this pea toast!

Charleston (Husk and Xiao Bao Biscuit) – Friday Dinner Series

February 21, 2014 by TheBetterHalf 3 Comments

Charleston, South Carolina is a charming southern town full of amazing food. Here are two of our favorite meals in Charleston – Husk and Xiao Bao Biscuit.

Charleston-9
Friday Dinner Series is back with a look at two of our favorite spots in Charleston, South Carolina. A few weeks back, Cate and I escaped snowy New York City for a weekend trip to one of the South’s culinary hotbeds. As a Northerner you won’t hear me say this too often, but man, the South really knows how to eat. Biscuits and gravy, fried chicken, bacon everywhere – and tons of beer and bourbon to wash it down. If I wasn’t 90% sure all of those things were bad for you I’d never eat anything else.

Charleston certainly excels at traditional southern food, but there’s more to their food scene than just shrimp and grits. They have an incredible amount of great restaurants in a relatively small area. Today, a quick look at Husk (actually, the Bar at Husk) and Xiao Bao Biscuit.

Bacon Bread

The title of this entry says it all for this one:  Bacon.Bread. Delicious, fluffy bread with tons of bacon baked inside.  Does it get any better?  I really don’t think so.  I’m pretty sure TheBetterHalf would be happy if this was the only bread I ever baked going forward.  I mean what is not to love about three quarters of a pound of bacon being added to your bread dough?  And imagine the sandwich possibilities with this loaf.  A turkey sandwich…on bacon bread.  A grilled cheese with tomato…on bacon bread.  A BLT!….on bacon bread. What doesn’t sound better when you put it on bacon bread?  I think even a PB&J would be phenomenal on this bread. I may or may not have tried that….TheBetterHalf was grossed out, but I thought it was amazing! The sweet and salty combo, mmmm….

Fluffy Buttermilk Pancakes

March 25, 2013 by Cate 22 Comments

Do you know what happens when you order a kale salad at Sunday brunch? You get to eat pancakes for dinner.  That’s a real rule, right?

On Sunday morning I went to brunch with my friend JC and I had my typical debate of whether to go sweet or savory.  It is really a struggle for me because I love pancakes.  I mean I REALLY love pancakes.  But savory usually wins out for two reasons: first, because I feel like it is usually a more balanced meal and second, because I like to bake my own sweet things (see here, here, here, you get the point).  So I ended up ordering a kale salad (at Acme NYC).  I love kale and I felt a little healthier starting my day with a superfood rather than with pancakes.

But then for the rest of the day I was thinking about  pancakes.  Dreaming about pancakes.  I even thought about pancakes during my workout class, so I decided to do something about it.  Breakfast for dinner, who doesn’t love that?! Plus I had some buttermilk to use up, so this was a perfect excuse! Waste not want not, right?…
