Brown Butter Easter Blondies

These soft and chewy blondies have the most amazing flavor thanks to brown butter. They are full of candy coated chocolate eggs, making them the perfect treat for Easter!

I almost didn’t post these Easter blondies. I really don’t love the pictures, so figured that I shouldn’t put them up. And then I started thinking about the blondies. And how delicious they were. And how the two of us finished the whole pan in about two days. And I realized it would be a shame if I didn’t give you the recipe! Plus – they use my absolute favorite Easter candy, and I have to tell you all about that. So here they are – Brown Butter Easter Blondies. They might be a little ugly in the pictures, but they sure taste amazing!

Grapefruit Yogurt Cake

This grapefruit yogurt cake is so moist and flavorful. It is light, healthy, and delicious – perfect for breakfast or with a cup of tea!

Grapefruit – I always assumed this was a pretty inoffensive fruit. Slightly tart but usually pretty sweet. Pretty to look at. Super healthy. Delicious juice. What’s not to love? And then I met TheBetterHalf. Apparently grapefruit can be a pretty polarizing fruit. He HATES them. Which I find so strange because he eats pretty much anything – he’s a big fan of food. I think that’s why I like him so much. But something about the tartness of grapefruit is just too much for him. It is actually hilarious to watch his face if he tries a bite of my grapefruit or a sip of the juice.

So I figured that this grapefruit yogurt cake would have to be eaten solely by me. Which I was totally ok with. Well it turns out that when you mix grapefruit zest into a yogurt cake and top it with a sugary grapefruit juice, he likes the stuff! Phew – I really didn’t need to eat a whole cake by myself.

I was so excited to share these Easter cookies with you this morning. It is officially spring, March is almost over, Easter is less than three weeks away – so I figured it was definitely time for Easter recipes. Then I woke up this morning and it was SNOWING. Somehow it just seems wrong to be eating pastel M&M Easter cookies when it is snowing. But you know what – these cookies are too good to not share with you. So snow or no snow, let’s eat Easter cookies!

Cara Cara Orange Mini Muffins

Cara cara orange zest is stirred into mini muffins, and then the juice is mixed with brown sugar and poured over the warm muffins. These are so flavorful and so good!

Have you ever made something, and then asked yourself, “Why have I not tried this before?!” That is exactly how I felt with these cara cara orange mini muffins. I have never baked with orange juice (or orange anything!) before, and I really have no idea why. I like oranges. They are pretty.  TheBetterHalf drinks orange juice almost every morning.  So why have I discriminated against this citrus fruit in my baked goods in the past? No clue.  These beautiful cara cara oranges are what prompted me to bake using oranges, and I am so thankful that they did – these muffins were SO good.

Almond Flour Bread

As you know from my many bread posts, I get really excited about my bread recipes. There is something so satisfying about baking your own loaf of bread. But today’s loaf is very special, and therefore I am even more excited than usual. That’s because it comes from this amazing cookbook, which happens to be written by my lovely aunt, Barbara Bryant, along with Betsy Fentress. Ok yes, I am totally biased on this one, but seriously – it is a gorgeous cookbook that is all about Almonds!  It is full of the interesting history of almonds, beautiful photos, and tons of delicious recipes. I highly recommend checking it out.

I will be trying many recipes from this book (Soba Noodles with Spicy Almond Butter Sauce anyone?) but I knew the first recipe I wanted to try – Almond Flour Bread.
