Valentine’s Funfetti Pancakes with Vanilla Greek Yogurt Sauce

Light and fluffy pancakes are fun and festive thanks to sprinkles in the batter. Greek yogurt is used in both the pancakes and the vanilla sauce, giving these funfetti pancakes tons of filling protein. Such a delicious and celebratory breakfast!

What a difference a day makes! Yesterday in NYC it was in the 50s and sunny and today it is 30 and snowing! We seriously got so lucky with the Superbowl weather.

Is everyone tired today from all the festivities last night? I know I am, and this snow is not helping things! So I need something to cheer me up today, and these pancakes are just the thing. Is everyone getting excited for Valentine‘s Day? I must admit, I have never really been into Valentine’s Day.  It was just never my thing (somewhere, TheBetterHalf breathes a huge sigh of relief…).  However I’ve crossed over to the food blogger dark side – you know, when you post recipes way before the actual holiday (like my Thanksgiving spread) and get overly excited for every little holiday (I mean who wouldn’t want to celebrate national cookie day!).  And really, when candy and cute colors like pink and red and adorable sprinkles are involved – well how can I not be on board with that?! So how are those New Year’s resolutions going?  Are we done with them yet?  I mean, we’re almost three weeks into January – I think that’s enough.  Or at the very least, can we take a break?  Yes?  Glad we’re on the same page.  Because I need some cookies.  I haven’t made any allllll year.  That’s way too long.  So without further ado, I present the first cookie for 2014 – pretzel chocolate chip cookies!  Yep, they are as good as they sound.  And as if the sweet and salty combo isn’t enough, these are also made with browned butter!  Definitely resolution-breaking-worthy.

These blueberry muffins are so light thanks to Greek yogurt. Frozen blueberries work so well in muffins, and make these easy to whip up any time of year!

Good morning!  Anyone in the mood for a muffin this morning?  I don’t know about you, but I am in the mood for a muffin just about every morning.  And while I would like chocolate chip or cookie butter to be a part of breakfast every day, my jeans disagree.  So instead, let’s have blueberry muffins!  I used frozen blueberries to make these because the fresh ones are looking pretty weak these days.  But frozen blueberries are good year round, and they actually work better than fresh ones in some recipes.   I like to use these frozen wild blueberries  when I make muffins because they are smaller, but full of great flavor….

Oatmeal Sandwich Bread

This is my first bread post of 2014!  I might seem overly excited about this, but it is because I love bread.  It doesn’t matter how many times I bake bread, I still get excited every time it turns out well.  And this loaf of oatmeal sandwich bread turned out so well.  TheBetterHalf actually said it was his favorite loaf yet, and that really shocked me because there is a whole cup of oatmeal in here!  He is not the biggest fan of oatmeal.  But you can’t actually tell there are oats in here – they kind of dissolve and the resulting bread has a soft but sturdy texture.  It is the perfect sandwich bread!

Just look at that PB&J – doesn’t that picture make you want one?   I might need to have that for lunch today.  …
