Chocolate Chip Raspberry Muffins

Chocolate Chip Raspberry Muffins are light and fluffy, and bursting with sweet raspberries and melty chocolate chips. So easy to make – they are the perfect weekend breakfast!

Saturday morning…to me it is absolutely the best time of the week. I just love the feeling of lazily waking up and having the promise of the entire weekend to do whatever I want. And as I’m sure you could guess, what I want to do almost always involves baking. You’ve probably noticed an abundance of breakfast recipes on Chez CateyLou, and that’s because I love making breakfast for us on Saturday mornings. Muffins and donuts and coffee cake and pancakes – I love all of them! Last Saturday I made Chocolate Chip Raspberry Muffins and wow, did we devour these. I love a good raspberry muffin, and of course melty chocolate chips can only make things better.

Toasted Almond Granola Bars

These crunchy Toasted Almond Granola Bars are fully of nutty, delicious flavor. These are my new favorite breakfast treat, and taste so much better than store bought!

Today’s post is a very special one – some blog friends and I are throwing a virtual bridal shower for our friend Nora from A Clean Bake. She is getting married in just a few short weeks! Light and fluffy buttermilk Pumpkin Cinnamon Rolls are topped with Cheese Frosting – the ultimate fall breakfast! They can be made overnight so that you can wake up to fresh rolls!

I saved the best for last…Pumpkin Cinnamon Rolls with Cream Cheese Frosting!! Pumpkin adds so much flavor and a beautiful color to the light and fluffy buttermilk dough. Pumpkin pie spice mixed with cinnamon gives the filling a distinct pumpkin-y flavor. And cream cheese frosting tops it all off. These rolls are absolutely delicious and could not be prettier. This is what I call a showstopper of a fall breakfast!

Welcome to day 4 of PUMPKIN WEEK! In case you missed my other posts, I have dedicated this week to all pumpkin recipes. Donuts and waffles and skinny bread – I can’t get enough pumpkin!

Today I’m taking a break from baking and making something super easy – Pumpkin Cream Cheese! This is the perfect thing to whip up if you want your breakfast to be special, but just don’t have the time to turn on the oven or make something complex. A little Pumpkin Cream Cheese on a store bought bagel is a great option for a fall breakfast treat that is delicious and impressive, but super easy!
