What kinds of food do you think of when you think about summer? I immediately think of ice cream, anything with berries or peaches, grilled everything, and pasta salad! Pasta salad is just such a perfect summery food. It is great for picnics or a light dinner. It is time for another Mystery Dish! And I’m soooo excited because this month I was the host! That’s right, I got to pick a list of ingredients for my other blog friends to use in their creations. So fun!

Baked Lemon Donuts made with Greek Yogurt

These baked lemon donuts are full of delicious citrus flavor. Greek yogurt is the secret to keeping them super light and moist – perfect for Mother’s Day brunch!

I always hear people say that they are either a lemon lover or a chocolate lover and I never really understood that – why can’t you be both?? If I had to pick, I (obviously) pick chocolate. But I really love lemon too! So even though I could eat these chocolate frosted donuts every day, I wanted to give lemon donuts a shot.

And wow, I’m so glad I did! These baked lemon donuts are absolutely amazing. The flavor is delicious – so fresh and citrusy. I think these would be a lovely thing to make for Mother’s Day brunch!

Quinoa Salad with Asparagus and Tomato

Bright and fresh asparagus and cherry tomatoes are mixed with healthy and hearty quinoa and then tossed in a simple lemon basil vinaigrette. A perfect springtime salad!

Is anyone else really into springy recipes lately? The weather is warmer and all the trees are in bloom here in NYC – it is so gorgeous! And it has me in the mood to cook lighter, healthier foods. Ok well except for these. But Saturday morning calories don’t count, right? Especially if you work out first!

But in general, I’ve been making lots of spring salads and other dishes to showcase all the great produce of the season. And one of my favorite spring veggies is asparagus. Lucky for me, it was on our Mystery Dish list this month!! Lemon and Mascarpone Gnocchi with Rosemary Brown Butter

These soft and pillowy lemon and mascarpone gnocchi are tossed in a rosemary brown butter sauce. The flavor and texture are out of this world!

I am slightly obsessed with the Food Network and have been for years. Specifically with Ina Garten and Giada de Laurentiis. I think I have seen every single episode of both of their shows. I just love the food they make, and they also both have pretty awesome lives. I have spent many a Saturday morning living vicariously through their shows. So when Ina had Giada as a guest on her show, I pretty much freaked! I was so excited. I still have it saved on my TiVo – TheBetterHalf keeps trying to delete it but I won’t let him! And ever since the show aired (ages ago!) I have been thinking about these Lemon Mascarpone Gnocchi that they made together. I finally got around to making them, and they definitely lived up to expectations!
