Hello from 35,000 feet in the air! TheBetterHalf and I are on our way to Seattle for memorial day weekend. (Ok now that I have internet to post this, we are already in Seattle. But I wrote this on the plane 🙂 ) We are so excited for our little getaway – I desperately need a vacation. I’ve heard great things about this city, and I know it has a great food scene! With memorial day weekend comes summer and with summer comes zucchini! I love baking with zucchini in the summertime. You don’t taste it at all, but it makes baked goods really moist. Plus, who couldn’t use a little extra nutrition in their muffins? And to top it all off, these chocolate zucchini muffins are 100% whole wheat, are made with Greek yogurt, and use coconut oil!  Such a healthy and delicious way to start your day.

Happy Sunday! How was everyone’s weekend? TheBetterHalf and I were in DC to celebrate his sister’s graduation from college. So even though I was not baking bread this weekend, I can still tell you about it!

Remember this English Muffin bread? I love it because it is one of the easiest yeast breads I have ever made – and it is delicious! These light and fluffy buttermilk cinnamon rolls with cream cheese frosting are the best I have ever tasted. Most of the work is done the night before, so you can wake up to fresh cinnamon rolls!

Cinnamon.Rolls. Are there two better words in the English language? I really don’t think so. I think waking up on a Saturday morning to a freshly baked cinnamon roll might just be the best thing ever. But if you’re making the real deal from start to finish with the yeast and the rising and the rolling and the slicing, then you are looking at cinnamon rolls for lunch rather than breakfast! And that’s why overnight cinnamon rolls are here to save the day.

I always hear people say that they are either a lemon lover or a chocolate lover and I never really understood that – why can’t you be both?? If I had to pick, I (obviously) pick chocolate. But I really love lemon too! So even though I could eat these chocolate frosted donuts every day, I wanted to give lemon donuts a shot.

And wow, I’m so glad I did! These baked lemon donuts are absolutely amazing. The flavor is delicious – so fresh and citrusy.  I think these would be a lovely thing to make for Mother’s Day brunch!
