This Cornmeal Olive Oil Blueberry Cake is just like a treat you would find in Italy! The flavor is incredible, and it is a perfect cake for summer.

We are back from our trip! We had the most amazing time – I shared a ton of photos on Instagram. I hope it wasn’t too many…I just couldn’t resist posting all of the gorgeous views and delicious meals! And I can’t wait to tell you more – a Portofino post will be coming soon. But first, let’s have cake.

Thanks to jetlag, I was up super early on Saturday morning and the first thing I wanted to do was bake! I missed the kitchen! I get so much inspiration when I travel, and want to recreate everything that I ate. We saw lots of olive oil cakes and lots of cornmeal in the breads and pastries in Italy, so that is what inspired me to make a Cornmeal Olive Oil Blueberry Cake!

With all the baking that I do, you would think that I have tried every classic recipe at least one time. Nope. Not even close. There are just SO many amazing recipes out there. My to-bake list is never-ending. However I am trying to knock out some of the most classic recipes, and Pineapple Upside-Down Cake is on that list! I know it isn’t that popular anymore, but it is such a well-known old fashioned recipe that I just had to try my hand at making one. Plus, I’m not sure how this happened, but I had never actually eaten a piece of pineapple upside-down cake until I made this one! Verdict: I am a fan!

A classic recipe for Texas Chocolate Sheet Cake. This cake is a family favorite for my husband and I can see why – it is so decadent and delicious!

I’m sharing a very special recipe with you today for a very special day…it is TheBetterHalf’s 30th Birthday! He’s finally as old as I am, at least for the next 6 months. He was complaining the other day about getting old. I told him he would get no sympathy from me! Welcome to 30 – it isn’t so bad!

I love celebrating birthdays on the blog – it is nice to have an excuse to make a decadent birthday treat (not that I need an excuse to bake…). Growing up, Texas Chocolate Sheet Cake was one of TheBetterHalf’s favorite desserts, so I got the recipe from his mom to make for his birthday. I was nervous to bake a family favorite, because I didn’t want to mess it up! Luckily, he said this chocolate sheet cake was just as good as he remembered it.

Happy 2nd Birthday to Chez CateyLou! My little blog is two years old today! And to celebrate, I made a birthday cake! Because birthdays need cake. And sprinkles. Lots of sprinkles!

Our absolute favorite dessert flavor is chocolate peanut butter. TheBetterHalf and I are crazy for anything with that combo. Muffins. Brownies. Cookies. Cake. I even made peanut butter chocolate chips pancakes for breakfast this weekend (must share that recipe with you ASAP!) So when I was deciding what kind of cake to bake for the big 2nd birthday, I knew that chocolate and peanut butter had to be involved – Yellow Birthday Cake with Peanut Butter Chocolate Frosting, and a little extra peanut butter filling in the center. This is one amazing cake!!

Healthier Chocolate Chip Zucchini bread is the perfect way to use up your zucchini this summer! It is light, although you would never know it – it tastes so delicious!

One of the most popular recipes on my blog is my Double Chocolate Zucchini Bread. And today I have a variation on that delicious loaf – Chocolate Chip Zucchini Bread! I love making zucchini bread in the summer – it seems like fresh zucchini is all over the place all summer long and zucchini bread is the perfect way to use it up. You can’t beat having two whole zucchinis hiding in a delicious treat. The whole loaf only has 1/4 cup of oil, yet it is still super moist thanks to Greek yogurt and the zucchini!
