Quinoa Salad with Asparagus and Tomato

Bright and fresh asparagus and cherry tomatoes are mixed with healthy and hearty quinoa and then tossed in a simple lemon basil vinaigrette. A perfect springtime salad!

Is anyone else really into springy recipes lately? The weather is warmer and all the trees are in bloom here in NYC – it is so gorgeous! And it has me in the mood to cook lighter, healthier foods. Ok well except for these. But Saturday morning calories don’t count, right? Especially if you work out first!

But in general, I’ve been making lots of spring salads and other dishes to showcase all the great produce of the season. And one of my favorite spring veggies is asparagus.  Lucky for me, it was on our Mystery Dish list this month!!  When I saw the list, I knew exactly what I was going to make – Quinoa Salad with Asparagus and Tomato in a simple Lemon Basil Vinaigrette.  …

Jacob’s Pickles – NYC

If you are looking for delicious southern food on the Upper West Side of NYC, then look no further than Jacob’s Pickles! This is comfort food at its finest!

This is Southern face it, if we too simple, than y’all don’t get the basics.

Sure, the above Lil’ Wayne quote may be referencing Southern rap music, but he just as easily could have been talking about Southern food. Biscuits, fried chicken, gravy, repeat. It’s not that hard. And yet, it’s not easy to find a spot near our apartment that excels at this kind of homey food. My favorite NYC chicken and biscuit joint, Pies -n- Thighs in Williamsburg, is incredible, but I don’t always have the time to travel to Brooklyn nor the patience to deal with hipsters. Luckily, Jacob’s Pickles, located in the Upper West Side, has brought delicious (and gut-busting) comfort food to Manhattan, alongside a great craft beer menu, pickled everything, and an inspired cocktail list. It’s definitely my favorite uptown brunch spot.

Oatmeal Sandwich Bread

This is my first bread post of 2014!  I might seem overly excited about this, but it is because I love bread.  It doesn’t matter how many times I bake bread, I still get excited every time it turns out well.  And this loaf of oatmeal sandwich bread turned out so well.  TheBetterHalf actually said it was his favorite loaf yet, and that really shocked me because there is a whole cup of oatmeal in here!  He is not the biggest fan of oatmeal.  But you can’t actually tell there are oats in here – they kind of dissolve and the resulting bread has a soft but sturdy texture.  It is the perfect sandwich bread!

Just look at that PB&J – doesn’t that picture make you want one?   I might need to have that for lunch today.  …

Best Vegetarian Chili

Is there a more perfect winter food than chili? It is so warm and comforting and makes such a hearty meal when it is cold outside.  And it’s the perfect food to eat when you’re watching football.  Now I’m sure my meat loving readers are scoffing over this meatless chili recipe, but I promise you, it’s delicious!  This chili is so full of flavor and texture that you won’t even miss the meat.  And if you are still in doubt, this vegetarian chili has TheBetterHalf’s seal of approval!  This is really saying a lot because he rarely has a meat free meal.
