Mango Strawberry Smoothie

Do you ever get obsessed with a certain food / recipe? I go through phases where I eat the same thing literally every day until I’m sick of it. For awhile, it was these pancakes (one of my favorite solo dinner meals!) And right now, it is this Mango Strawberry Smoothie. I have found my perfect smoothie combo! Frozen mangos, fresh strawberries, light vanilla yogurt, and pineapple-coconut water. Love love love it.   The flavor is amazing, and it is so refreshing.  I’m absolutely obsessed!

I don’t know about you, but I can barely remember my new year’s resolutions. Ok correction – I remember them, I just haven’t exactly been sticking to them. I think my good intentions lasted all of 7 days. I just can’t say no to these and these. If you’ve spent any amount of time with me, you know I love my snacks! I seriously can’t go two hours without snacking on something. But when you snack as much as I do, the key is to keep the snacks healthy and  nutritionally balanced. That’s why one of my favorite snacks to reach for are pistachios! They are a great way to get a salty, crunchy fix while sticking with a healthy diet.

Plus, pistachios pair so well with other foods to create perfect snacks or mini-meals. One of my favorite pairings is pistachios with Greek yogurt, blackberries, and green tea to drink. This is literally the perfect snack –  protein from the yogurt, a little healthy fat (plus protein and fiber) from the pistachios, vitamins and fiber from the berries, and antioxidants from the green tea. Talk about a power snack! And filling too. I add a small drizzle of honey too since I like things sweet!

This book, Almonds: Recipes, History, Culture is full of gorgeous photos and tons of delicious recipes. It would be the perfect addition to any cook’s collection, and also makes a great coffee table book.

I love the idea of making something from a cookbook and then giving it as a gift with the book. I made Burnt Sugar Almonds from the Almonds book and wrapped them up in a cellophane bag tied with a pretty little ribbon. It makes such a cute and thoughtful gift, not to mention a delicious one!
