Were you expecting a pumpkin recipe today? Not so fast. This week has been one of the hottest we’ve had all summer in NYC, so pumpkin needs to wait a few weeks! I’m still cooking summery dishes and loving it! Like this Orzo and Snap Pea Salad, with yellow squash and zucchini. This is an easy one-pot meal that is the perfect light dinner!

Thai Roasted Kabocha Squash

Kabocha squash is roasted with shallots, tossed in a Thai style vinaigrette, and topped with fresh cilantro. There are so many amazing flavors in this Thai Roasted Kabocha Squash!

With spring only one day away (allegedly…the sleet on my way to work says otherwise), I need to share one last wintery veggie recipe with you – Thai roasted kabocha squash! While I am so excited for spring and all of the delicious veggies that the season brings, I am a little sad to see squash season go. I loooove squash. And particularly Kabocha squash! However if I had a hard enough time finding it in peak squash season, I’m sure I won’t be coming across it for the next few months.

And speaking of squash season, I need to RUN to ABC Kitchen ASAP to get one last fix of my beloved Kabocha squash toast. TheBetterHalf, if you are reading, let’s go after work!

ABC Kitchen’s Kabocha Squash Toast

A recipe for the roasted Kabocha Squash Toast from ABC Kitchen in NYC. Now I can make my absolute favorite restaurant dish at home, and it is easy!

It is day two of Chez CateyLou’s 1st birthday celebration! Yesterday we had a delicious chocolate cake with peanut butter frosting. Today, we are returning to where it all began – ChezCateyLou’s very first post on the delicious squash toast at ABC Kitchen here in NYC.  And now, one year later, I am sharing the recipe with you so that you can make this amazing toast at home!  ABC Kitchen’s squash toast is my absolute favorite dish that I’ve had at any restaurant, ever.  I’m literally obsessed and crave it weekly – it is kind of strange. We have been to ABC Kitchen several times this winter just to sit at the bar and eat squash toast.

Butternut Squash Potstickers with Sriracha Ginger Dipping Sauce

I am a huge fan of butternut squash. I get so excited when I see it popping up all over markets and on restaurant menus in the fall.  I like to buy the packages of precut cubes.  It just seems much safer to me…every time I take the giant chef’s knife to a whole butternut squash I come perilously close to losing a finger.

Usually we just roast our butternut squash – toss it in some olive oil, salt and pepper and roast for 20 mins at 400 degrees.  Simple and delicious.  But I decided to branch out with my latest butternut squash purchase and make potstickers.  Wow.  Amazing.  New favorite recipe!  This was my first time making potstickers and I have to say, I was pretty darn proud of myself.
