Baked Blueberry Donuts & a Giveaway!

Happy Friday! Labor Day Weekend is so bittersweet. I love having a day off work, the promise of my favorite season ahead, and Notre Dame football starting tomorrow (!). But on the other hand, it means the end of summer which is always kind of sad. So to send summer off in style I drank a bottle of Rosé with my friends last night and made baked blueberry donuts for you – because nothing says summer to me more than fresh berries! And Rosé.

Also, today marks the year anniversary of the Mystery Dish group!! I joined the group late, but I still get to celebrate with them, right?! Is everyone gearing up for back to school? I can’t believe summer is almost over! Although the benefit of not having kids and not being in school is that summer isn’t really over until the weather starts to get cold! So even though fall is my favorite season, I’m not quite ready to embrace it just yet. I saw Pumpkin Spice Lattes this morning at Starbucks – it just seems wrong when it is 90 degrees outside and I’m wearing a white dress!

But even though I’m not quite on board with fall, I can get totally get on board with back to school treats, like these Mini M&M cookies! These are the perfect treat to pack in your kid’s lunchbox for the first day of school.

Rustic Strawberry Peach Tart

Summer fruit shines in this rustic fruit tart (also called a Galette). Peaches and strawberries are surrounded by a light and flaky tart dough – so much easier to make than pie!

And now on to this beauty – my Rustic Strawberry Peach Tart. Also called a freeform tart or a galette. It is one of the best things I have ever made and definitely my favorite thing of the summer. It is similar to pie, but the crust is so simple to make, and it is a little bit sweeter than traditional pie crust. It almost reminds me of a sugar cookie crust, stuffed with delicious fruit. Can’t go wrong with that!

Vanilla Bean Ricotta Cheesecake Cake + a Giveaway!

Yellow cake gets dressed up with a vanilla bean ricotta cheesecake filling. This cake is so simple to make and tastes delicious – the vanilla flavor really shines!

What are your thoughts on baking with cake mix? I don’t use boxed cake mixes all that often, but sometimes I like to take a little help from the grocery store! Plus, there is something about the flavor of boxed cake mix that is just so delicious.

Ever since Cheesecake Day the other day, I’ve had cheesecake on the brain. And I also had a container of ricotta to use up, so I decided to try something very different from anything I’ve ever made – Vanilla Bean Ricotta Cheesecake Cake.

I love baking with vanilla beans! The little seeds add the most incredible flavor to baked goods. Plus the bean specks are so pretty.
