Lentil Salad with Olives, Mint, and Feta

Lentils are cooked until creamy but firm, tossed in a mustard vinaigrette, and then mixed with kalamata olives, feta cheese, and fresh mint. Healthy, easy, and delicious!

Have you heard of Meatless Monday? According to Wikipedia: “Meatless Monday is an international campaign that encourages people to not eat meat on Mondays to improve their health and the health of the planet.”  Sounds like a win win to me!

Plus, I always try to be a little healthier on Mondays. It feels good to start the week off on a healthy foot, and to undo some of the damage from the weekend – because I don’t know about you, but my weekends are usually full of eating pretty much whatever I want.  So I have a great meatless and healthy recipe to share with you today – Lentil Salad with Olives, Mint, and Feta….

Cara Cara Orange Mini Muffins

Cara cara orange zest is stirred into mini muffins, and then the juice is mixed with brown sugar and poured over the warm muffins. These are so flavorful and so good!

Have you ever made something, and then asked yourself, “Why have I not tried this before?!” That is exactly how I felt with these cara cara orange mini muffins. I have never baked with orange juice (or orange anything!) before, and I really have no idea why. I like oranges. They are pretty.  TheBetterHalf drinks orange juice almost every morning.  So why have I discriminated against this citrus fruit in my baked goods in the past? No clue.  These beautiful cara cara oranges are what prompted me to bake using oranges, and I am so thankful that they did – these muffins were SO good.

Healthy Blackberry Coconut Yogurt Bread

Blackberries and coconut, in the winter? Why not! I am channeling the tropics this weekend, trying to pretend that I am lying on a beach somewhere warm rather than looking out at a cold gray city skyline. And nothing says tropical more than coconut!

I am currently obsessed with this Chobani coconut  yogurt. Have you tried it? It is so creamy and coconutty – it kind of makes me feel like I’m eating ice cream! And no, they are not paying me – I just really love this yogurt! So when I was eating some the other day, I thought why not bake this delicious flavor into something? And so I came up with this blackberry coconut bread.

I feel like I’m cheating with this post.   Why?  Because I didn’t make it!  Yep ladies and gentlemen – TheBetterHalf made this whole thing, from start to finish.  I didn’t even help him!  Ok, he might have asked a question or two (he’s still not quite sure what an immersion blender is).  But still, I’m impressed.  I could get used to this – homemade soup is one of my favorite things to eat, and somehow it tastes better when someone else makes it!  Take note, TheBetterHalf.

Is everyone getting excited for Valentine‘s Day? I must admit, I have never really been into Valentine’s Day.  It was just never my thing (somewhere, TheBetterHalf breathes a huge sigh of relief…).  However I’ve crossed over to the food blogger dark side – you know, when you post recipes way before the actual holiday (like my Thanksgiving spread) and get overly excited for every little holiday (I mean who wouldn’t want to celebrate national cookie day!).  And really, when candy and cute colors like pink and red and adorable sprinkles are involved – well how can I not be on board with that?!
