Ok I know what you’re thinking right now – Broccoli? But what about the donuts and cookies and chocolate peanut butter anything? Don’t worry, they are coming soon (I may or may not have made these last night…). But I just HAD to tell you about this broccoli. Why?

Because it is the absolute best broccoli I have ever had. In fact, it is the best veggie I have ever had – at a restaurant or in my own kitchen. I’m not exaggerating. This stuff is amazing. It even converted TheBetterHalf into a broccoli lover, and he had previously not been a fan of the healthy green vegetable. Plus it is so simple to make – there are only 5 ingredients, and that is counting salt and pepper!…

Happy Friday! And it is an especially happy Friday because it is Cinco de Mayo and Derby weekend. Aka lot of delicious food and great drinks. I wanted to post something for Cinco de Mayo, and visions of churros and fish tacos and magaritas were dancing through my head. And those ideas are still floating around to make this weekend, but I really wanted to go back to basics, Cinco de Mayo style, and make some Mexican Brown Rice.

Ok I know, it sounds kind of boring. But sometimes simple food is the best food. Like this Mexican rice – it is nothing fancy, just some brown rice with tomatoes, onions, and jalapenos (and a few other goodies!), but it is so good! Plus it is the perfect side dish to make for your Cinco de Mayo feasts.

Is anyone else really into springy recipes lately? The weather is warmer and all the trees are in bloom here in NYC – it is so gorgeous! And it has me in the mood to cook lighter, healthier foods. Ok well except for these. But Saturday morning calories don’t count, right? Especially if you work out first!

But in general, I’ve been making lots of spring salads and other dishes to showcase all the great produce of the season. I am slightly obsessed with the Food Network and have been for years. Specifically with Ina Garten and Giada de Laurentiis. I think I have seen every single episode of both of their shows. I just love the food they make, and they also both have pretty awesome lives. I have spent many a Saturday morning living vicariously through their shows. So when Ina had Giada as a guest on her show, I pretty much freaked! I was so excited. I still have it saved on my TiVo – TheBetterHalf keeps trying to delete it but I won’t let him! And ever since the show aired (ages ago!) I have been thinking about these Lemon Mascarpone Gnocchi that they made together. I finally got around to making them, and they definitely lived up to expectations!

Have you heard of Meatless Monday? According to Wikipedia: “Meatless Monday is an international campaign that encourages people to not eat meat on Mondays to improve their health and the health of the planet.”  Sounds like a win win to me!

Plus, I always try to be a little healthier on Mondays. It feels good to start the week off on a healthy foot, and to undo some of the damage from the weekend – because I don’t know about you, but my weekends are usually full of eating pretty much whatever I want.  So I have a great meatless and healthy recipe to share with you today – Lentil Salad with Olives, Mint, and Feta….
