Did everyone have a good holiday weekend? It was nice to have a day off work but I must say, my weekend was not so great. TheBetterHalf and I were supposed to go visit my family in St. Louis. After an hour delay and 2 hours sitting on the plane at LaGuardia, AA canceled our flight! They were unable to re-book us, so we had to cancel our whole trip. Needless to say, I was not a happy camper.

So I made a cake to cheer myself up! Who wouldn’t smile at a nice, rich chocolate bundt cake!  Just smelling this in the oven made my weekend start to look up immediately.

The best broccoli you will ever eat, and it is simple to make! Crispy, flavorful, and absolutely addictive – healthy has never tasted so delicious!

Ok I know what you’re thinking right now – Broccoli? But what about the donuts and cookies and chocolate peanut butter anything? Don’t worry, they are coming soon (I may or may not have made these last night…). But I just HAD to tell you about this broccoli. Why?

Because it is the absolute best broccoli I have ever had. In fact, it is the best veggie I have ever had – at a restaurant or in my own kitchen. I’m not exaggerating. This stuff is amazing. It even converted TheBetterHalf into a broccoli lover, and he had previously not been a fan of the healthy green vegetable. Plus it is so simple to make – there are only 5 ingredients, and that is counting salt and pepper!…

Mexican Rice made with Brown Rice

Brown rice is cooked with onions, tomatoes, garlic, and jalapenos making this Mexican Rice so flavorful and delicious! A great side dish for Cinco de Mayo!

Happy Friday! And it is an especially happy Friday because it is Cinco de Mayo and Derby weekend. Aka lot of delicious food and great drinks. I wanted to post something for Cinco de Mayo, and visions of churros and fish tacos and magaritas were dancing through my head. And those ideas are still floating around to make this weekend, but I really wanted to go back to basics, Cinco de Mayo style, and make some Mexican Brown Rice.

Ok I know, it sounds kind of boring. But sometimes simple food is the best food. Like this Mexican rice – it is nothing fancy, just some brown rice with tomatoes, onions, and jalapenos (and a few other goodies!), but it is so good! Plus it is the perfect side dish to make for your Cinco de Mayo feasts.

Lentil Salad with Olives, Mint, and Feta

Lentils are cooked until creamy but firm, tossed in a mustard vinaigrette, and then mixed with kalamata olives, feta cheese, and fresh mint. Healthy, easy, and delicious!

Have you heard of Meatless Monday? According to Wikipedia: “Meatless Monday is an international campaign that encourages people to not eat meat on Mondays to improve their health and the health of the planet.”  Sounds like a win win to me!

Plus, I always try to be a little healthier on Mondays. It feels good to start the week off on a healthy foot, and to undo some of the damage from the weekend – because I don’t know about you, but my weekends are usually full of eating pretty much whatever I want.  So I have a great meatless and healthy recipe to share with you today – Lentil Salad with Olives, Mint, and Feta….

Blueberry Muffins made with Frozen Blueberries

These blueberry muffins are so light thanks to Greek yogurt. Frozen blueberries work so well in muffins, and make these easy to whip up any time of year!

Good morning!  Anyone in the mood for a muffin this morning?  I don’t know about you, but I am in the mood for a muffin just about every morning.  And while I would like chocolate chip or cookie butter to be a part of breakfast every day, my jeans disagree.  So instead, let’s have blueberry muffins!  I used frozen blueberries to make these because the fresh ones are looking pretty weak these days.  But frozen blueberries are good year round, and they actually work better than fresh ones in some recipes.   I like to use these frozen wild blueberries  when I make muffins because they are smaller, but full of great flavor….
