Simple Summer Bruschetta is the perfect way to highlight the delicious flavor of summer tomatoes. It is so easy to prepare but looks beautiful and elegant.

I have the perfect summer Monday recipe for you – Simple Summer Bruschetta. When I say simple, I am not kidding. This recipe is so easy, it is barely a recipe! And that is just what my Mondays call for. After a long day of work, the last thing I want to do on Monday nights is spend hours cooking. And while TheBetterHalf might not think bruschetta is dinner, for me it is the perfect light meal!

Cinnamon Raisin English Muffin Bread

May 18, 2014 by Cate 25 Comments

Cinnamon Raisin English Muffin bread is the easiest yeast bread you will ever make and it tastes absolutely delicious! It is the perfect toasting bread!
Cinnamon Raisin English Muffin Bread | chezcateylou.com

Happy Sunday! How was everyone’s weekend? TheBetterHalf and I were in DC to celebrate his sister’s graduation from college. So even though I was not baking bread this weekend, I can still tell you about it!

Remember this English Muffin bread? I love it because it is one of the easiest yeast breads I have ever made – and it is delicious! Well I decided to change it up a bit and make a cinnamon raisin version. It is equally as easy as the original, and it tastes even more delicious – because in my opinion, you can never have enough cinnamon!…

Almond Flour Bread

March 17, 2014 by Cate 37 Comments

Almond flour gives this loaf of yeast bread a slightly nutty flavor and results in an amazing texture. If you want to try baking with almond flour, this is the perfect recipe!
Almond Flour Bread | chezcateylou.com

As you know from my many bread posts, I get really excited about my bread recipes. There is something so satisfying about baking your own loaf of bread. But today’s loaf is very special, and therefore I am even more excited than usual. That’s because it comes from this amazing cookbook, which happens to be written by my lovely aunt, Barbara Bryant, along with Betsy Fentress. Ok yes, I am totally biased on this one, but seriously – it is a gorgeous cookbook that is all about Almonds!  It is full of the interesting history of almonds, beautiful photos, and tons of delicious recipes. I highly recommend checking it out.

I will be trying many recipes from this book (Soba Noodles with Spicy Almond Butter Sauce anyone?) but I knew the first recipe I wanted to try – Almond Flour Bread.

Minty Pea Prosciutto Toast

February 28, 2014 by Cate 24 Comments

minty-pea-prosciutto-toast-7

Oh wow, this month has flown by! I seriously can’t believe it is already Feb. 28. And, already time for another Mystery Dish post! The amazing Christine from I Dig Pinterest picked the ingredients for us this month. They were:

Fresh Mushrooms
Pork
Spinach
Cream Cheese
Pineapple
Butterscotch Chips
Macadamia Nuts
Sriracha Hot Chili Sauce
Ritz Crackers
Tortillas

I was seriously considering making spinach artichoke dip with mushrooms and bacon, using cream cheese and sriracha, and having ritz crackers and homemade tortilla chips for dipping! But then I decided to settle down. No need to get so wild. Plus, I was dying to make this pea toast!

Deli Style Rolls

February 27, 2014 by Cate 20 Comments

These deli style rolls are the perfect sandwich roll – they have a substantial crust yet are light and airy on the inside. Just like you would find at a deli!

Deli Style Rolls | chezcateylou.com

It is no secret that I love baking bread. I usually try out a different loaf every weekend that we are in town. But for some reason, I never make rolls. I’m not sure why – they aren’t harder to make than normal bread. I just never think about it. But some sandwiches just call out for a roll. Like pulled pork – definitely need a roll for that! Or an egg sandwich – it just isn’t the same on toast. So I decided that we needed some deli style rolls in our life!…
